“Poutargue” (or “Boutargue” or Mediterranean caviar) is a speciality made from dried, salted mullet roe. Originally found along the coasts of the Mediterranean basin, ours is micro-produced in France in the Bouches du Rhone (13).
To drink with a white: Alsace Riesling, coasts of Provence, muscadet wine, champagne or creaming d' Alsace.
This rich, marinated speciality is best consumed pure to fully appreciate the luxurious flavours. Wafer thin cut Pourtargue works exceptionally as an aperitif on its own or thinly spread on buttered toast. This bubbly seafood cocktail will tickle your taste buds in no time! Finely grated Poutargue works equally well as an accompaniment to your main dishes (see our recipes). Please note that Poutargue is always consumed raw!
Wax-preserved Poutargue keeps for 4 months in dry, refrigerated conditions. Once opened, cover with cling film, (aluminium foil is not recommended) and avoid eating too cold as the flavours can be affected. Poutargue is best removed from the fridge half an hour before being served!
Health wise, Pourtague is 100% natural and contains no additives or colouring agents. It is an excellent source of calcium, vitamins A, D & B, magnesium, selenium, phosphorous, iodine and fluorine. Of course being a fatty fish it is also full of Omega 3!
